One dessert shop in New York City has taken a food mash-up to the next level.

The Dessert Kitchen in Greenwich Village has found a way to serve ramen for dessert. Ramen ice cream is their latest creation that puts a spin on the traditional noodle dish.

The noodles, called “Ice Stream,” are traditional Japanese jelly noodles known as kanten or agar noodles and are made from algae. Agar is a traditional ingredient used in many Asian desserts to create a Jell-O like texture. The clear, jelly-like noodles sit on top of a bed of crushed ice covered in evaporated milk.

So, how is this interesting creation made?

“We cook the agar powder with water and sugar, and it comes together very fast,” owner of their Greenwich Village shop, Candice Auyeung, shared with Today. “It’s like pasta. It comes out as a sheet, and we cut it by hand.”

Next the chef prepares a bowl of crushed ice covered with evaporated milk. Mochi balls and frozen chunks of mango and cantaloupe top off the dish.

Then comes the fun part! The bright blue noodles are placed on top of the crushed ice and evaporated milk to look just like a waterfall. The dish is finally finished off with some peach syrup.

The dessert ramen also comes in a few flavors. You can choose from different sauce flavors such as brown sugar, honey, and green tea, and choose clear or red noodles as well.
